Kitchen knives
Japanese kitchen knives come from a handful of towns, and most of the makers there do not sell abroad or answer English email. In several regions the work is divided between smith, sharpener and handle-fitter, and the knife is sold under the name of the house that commissioned it, so I first find out who can actually change what.
What can be made
- A starter range for a shop: a few shapes such as gyuto, santoku, petty and nakiri
- Engraving a name on the blade
- Your logo or brand etched, laser-marked or stamped (stamping usually needs a die)
- Repeat orders of a line that sells
How far it can be yours
Each step down adds setup work for the maker, and usually a larger minimum.
- Stocked references. The maker's or house's existing knives, mixed in one order.
- Engraving. A name on the blade. Common in Japan and offered by many makers.
- Your brand on the blade. Some makers do private label routinely; some put no name on a blade but their own. I ask and tell you who said what.

Worth knowing first
Blades have rules at both ends. Your country may restrict certain blades or how knives are sold and delivered. Japan Post accepts knives only with the edge and point covered by a sturdy sheath, cushioned in a strong box; couriers set their own conditions, which I confirm before quoting shipping.
Minimum lot, price and lead time
They are set by each maker and differ widely, so I do not publish typical figures. I bring back each maker's own minimum, unit price and lead time in writing, and tell you which change would bring the minimum down.
